I finally discovered the key to taking rainbows! Before all my pictures were washed-out and you couldn't see the rainbow, but if you use low contrast on in-camera settings, the rainbow pops out.
On most digital cameras the user has the ability to adjust different settings (sharpness, color, contrast, etc.) On my camera I set the contrast to low, and the color to vivid to take this rainbow shot. Your camera may be different, but using a lower contrast setting should work.
